Hello Friends!! I have the easiest summer recipe for you today! Trust me, this takes no time to prepare, and makes such a tasty dish for any summer gathering. I’ve also teamed up with a fantastic group of bloggers as we all share 20 of our favorite summer recipes, part of the Seasonal Simplicity tour hosted by Krista from the Happy Housie.
I’m a rule follower, so I love following a recipe. This one I’m sharing with you today is a classic favorite that I morphed out of inspiration from a dish I had during our little weekend away this past fall. With only a few simple ingredients, you can make this delicious dish too!
Every morning at our hotel, I got their omelet. It was delicious and full of flavor, but what added so much of the flavor was the cherry tomatoes they served on the side, almost like a subtle garnish. Tossed in olive oil and basil pesto, it was subtle yet tasteful. So going off of that I tweaked a classic favorite on what is similar to a caprese salad.
I’ve never been a huge fan of tomatoes, but having the tiny cherry tomatoes prepared that way made me look at these tomatoes in a completely different way. I get the variety pack of cherry tomatoes because I love all the extra color it adds to this simple dish.
First I slice them in half and toss them in a bowl.
Then I finely dice red onion, and toss them in with the tomatoes.
Next I slice and cube mozzarella, and toss it in the bowl with the tomatoes and onion.
The ingredients are simple, but I think what sets this dish apart is the seasoning that gives it it’s flavor. Don’t underestimate the seasoning when preparing this simple dish.
Next I drizzle a few tablespoons of avocado oil (you can use olive oil too) over the entire mixture. I freshly grind salt and pepper, to taste, and toss making sure everything is evenly coated.
Then I chop a handful of fresh basil and toss it in with the mixture. It’s really so quick to throw this dish together, and the best part is you can make it to your own taste preferences.
You can serve it as a side, add it to your favorite salad, or just have it by itself. It really is that simple and tasty.
Ingredients
1 pint Cherry Tomatoes, halved
1/3 cup Red Onion, diced
3/4 cup Mozzarella, cubed
1/4 cup Fresh Basil, chopped
Oil, Salt & Pepper
